Schezwan Soup | Szechuan Hot and Sour Soup | Neelo's kitchen

Szechuan soup should have a thick consistency with mushrooms and tofu adding texture and egg strands beautifully wrapping up the whole thing. you can adjust sourness and chilli as per your taste. Szechuan Hot & Sour Soup is an Indo-Chinese style of making chicken soup with spicy and sour flavours.

Szechuan Hot and Sour Soup is a weakness of mine. Delicious hot and sour soup does not need to be complicated. This is my quick and easy interpretation of the classic Chinese version - ready in about half an hour.

This soup is packed with the acidity of vinegar, the spiciness of the Red and black pepper and the nuttiness of sesame oil.

The flavour becomes even more complex with the inclusion of bamboo shoot,  mushrooms, tofu and finishes with a beaten egg pour high above the soup to form multiple small egg ribbons floating on the thick soup.

This recipe is very close to the original hot and sour soup in China, although I have left out some ingredients such as ‘ tofu’ bamboo shoots which is too exotic for most people.

I can assure you that it is way better than many substandard hot and sour soup that is merely a tasteless, gloopy mess of cornstarch paste.

Ingredients used in making scrumptious Szechuan soup:


First make yakhni ( Chicken stock). You can save this yakhni in freezer for months:



You can add Vegetables of your choice:



Add egg: 


Serve soup with Soy Sauce, Chilli Sauce and chilli vinegar. 





Are you a vegetarian?

You can omit the meat for a vegetarian version. Just add more of other ingredients slightly.

There are many variations of this soup. However, tofu, mushrooms, egg, and bamboo shoots can be found in almost every recipe, but you can add and skip ingredients as per your preference. 

In the end you can have the final adjustment of the flavour. Add more vinegar and pepper if you want a more intense flavour or some extra soy sauce for stronger umami. Add some chopped coriander or spring onion on top to garnish.
