Roast Potatoes with Roasted Vegetables Neelo's kitchen
The best crispy roast potatoes - an essential component of any roast dinner! This is desi version/ spicy roast potatoes. if you don't like spicy skip red chilli and follow all steps for crispy and yummy roast potatoes. I like spicy version. Roast potatoes are a staple dish that everyone needs to perfect at some point, simply because they are just so pleasurable to eat. These perfect roast potatoes are just what everyone needs for completing their roast dinners. They are really easy to make and a tasty side dish to many meals.

First start by boiling the potatoes in plenty of water until half done. This is how we get the extra fluffy edges that will crisp up in the oven later.

Freezing tip:
You can make roast potatoes ahead and reheat them for a stress-free roast dinner. Parboil the potatoes as shown in video, drained, bashed potatoes to cool slightly. Toss them in the fat and spices mention in video, so that the potatoes are as evenly coated as possible. Then spread them out on one or two trays so the potatoes are not touching each other. When completely cold, freeze the potatoes on their trays. (After they are frozen you can transfer them to a freezer bag.) Cook the frozen potatoes at the same temperature in a dry roasting tin, adding another 15 minutes to the cooking time.
Suggestions:- You can store leftover roast potatoes in an airtight container or wrapped in clingfilm in the fridge for up to 2 days.
- If you’re looking to make perfectly roasted potatoes you’ll want to make sure your potatoes are dry once they’ve been boiled. Make sure they are drained thoroughly. Wet potatoes won’t crisp as well.
